Simple Italian Chicken Broth

Growing up, this dish was a staple in my family. Its easy, its quick and can feed a big family. Whenever the winter time would come around, this dish would be on the table at my house, my grandparents house and other relatives houses. Italian dishes tend to be easy and quick as they have been passed down in generations of big families, this dish in particular is made in one pot and can be added to pasta to create more of a filling and hearty meal; otherwise it can be enjoyed as it is. 



1 Whole Organic/Corn Fed Chicken

2 Stock Cubes

Bunch of Celery leaves

1 Large Onion

4 Medium Carrots

2 Large Potatoes

1/2 Tin Plum Tomatoes

1 tsp Oregano

1/2 tsp Chilli Flakes


1/2 Pack Pastina (Optional)

Cube sized rind of Parmesan Cheese (Optional)



  1. Cut up chicken into sections and put in a big pot (leave chicken skin on)
  2. Peel and chop carrots into 3 sections and add to pot
  3. Peel and quarter potatoes then add to pot
  4. Peel and thinly slice onion, add to pot
  5. Add tin tomatoes, celery leaves, chilli flakes, stock cubes and oregano
  6. Add parmesan rind (optional)
  7. Fill pot with boiling water until chicken is fully covered
  8. Bring water to the boil and then simmer with lid on until chicken is cooked and vegetables are soft
  9. Remove parmesan rind once everything is cooked
  10. *OPTIONAL* Cook half a pack of pastina and add to the broth when ready to serve
