This is a take on our version of a Brazilian Breakfast..Its filling and tasty so a great meal to start the day. This can also be enjoyed for lunch or dinner and can be added as a side dish.

 

RECIPE:

1 Large Sweet Potato

1 Large Jacket Potato

1 Large Red Onion

1 Medium Fresh Chilli

1/2 tsp Garlic Salt

3 Strips Smoky Bacon

1/4 Mozzarella Ball

1/2 tbsp Balsamic Vinegar

1 tsp Fresh Coriander

1 tsp Celery Leaves

1 tbsp Tomato Puree

1/2 Cup Cheddar Cheese

1 Stock Cube

Coconut Oil

1/2 cup Water

Poached Eggs (For topping)

 

METHOD:

  1. Peel and chop both types of potato into small cubes
  2. Peel and chop onion into small cubes
  3. Cut bacon into small square pieces
  4. Slice chilli into small sections
  5. Add 1 tbsp of coconut oil to a hot frying pan
  6. Put chopped onion and chilli into the pan – Fry until tender.
  7. Add in the chopped potatoes and stir
  8. Add the garlic salt, balsamic vinegar and stock cube
  9. Pour in the water and add the tomato puree
  10. Simmer for 5 minutes
  11. Stir and add in the bacon, mozzarella, celery leaves, coriander and more coconut oil if necessary
  12. Cover pan with foil and simmer for another 5 minutes
  13. Remove the foil, stir, then add in the cheeses
  14. Cover pan again and simmer for another few minutes
  15. *Now you can poach a couple eggs and set aside once they’ve cooked*
  16. Remove the foil again and stir once more. The potato should be slightly crispy and the cheese should be fully incorporated
  17. Take off the heat, place poached eggs on top, add more coriander if necessary then serve.

 

Serve the pan on a hot plate and allow everyone to help themselves…
