Chocolate, Date and Coconut Raw Cake

This is a quick and easy dual layer chocolate cake, that doesn’t have to be cooked in the oven…Its just a bit harder than the consistency of a brownie, its also incredibly rich. Alternatively, you can serve it as a cake or cut up into little brownie pieces.

 

RECIPE:

(BASE)

2 Cups Pitted Dates

1 tsp Sunflower Seeds

1 tsp Coconut Oil

(TOPPING)

2 Cups Dark Chocolate (84% cocoa)

1 Shot Malibu (Optional)

1 Egg Yolk (Optional)

Dessicated Coconut (Sprinkle)

 

METHOD:

  • Blend dates, coconut oil and sunflower seeds in a food processor until a thick paste
  • Spread evenly in a preferred tin
  • Melt chocolate in a bain marie*

(how to melt chocolate in a bain marie)

  • Once melted add the optional Malibu and egg yolk into the chocolate (egg yolk will make it a non raw cake)
  • Spread chocolate mixture evenly on top of date mixture
  • Sprinkle dessicated coconut on top
  • Place in fridge for 15 minutes to harden
  • Easy!
