Beans for breakfast a few years ago is something I wouldn’t of had, normally it was a bowl of porridge and an espresso. This is a breakfast inspired from Central America. The beans alone gives you a big hearty breakfast packed with spice and flavour, curbing them cravings off later in the day. It’s heathly too, cereal is just packed with sugar which will make you want to eat more and more.  Alternatively you can have eggs and guacamole to turn it into brunch or switch up the beans as every bean is different.

 

RECIPE:

1 can of kidney beans

1 can of borlotti beans

Teaspoon of chill powder

1/2 teaspoon of garlic salt

Pepper

Teaspoon of cumin seeds (ground is fine)

1 onion

3 big tomatoes

Tablespoon of curry powder

Sprinkle of cinnemon

Homemade chilli and garlic olive oil

 

METHOD:

  • Cut onions into small chuncks and fry in chilli oil
  • Add cut up tomatoes
  • Add all spices
  • Drain both cans of beans and add to pan
  • Heat on a simmer until beans become soft
  • Optional: crush beans to make a thicker consistency

 

I brought it in a freezer bag and eat it in Pret with a cup of coffee.
