Coconut Laksa Soup

Simple and easy Laksa soup with a coconut milk base. This dish is fragrant and refreshing that’ll make you feel energised. (Great for a detox meal).



1 Sweet Potato

1 Fresh Chilli

Coconut oil

Salt & Pepper

2 Garlic cloves

Bunch of coriander

1 tbsp Sesame oil

2 Limes

1 can of Coconut milk

2 Cans of water

Stock cube

1 Onion

1 stick of Lemongrass

Bunch of Beansprouts

Buch of Green Beans




  • Fry onion, garlic, ginger and lemongrass and coconut oil in a pan
  • Add green beans, sweet potato and beansprouts
  • Mix in the corainder, salt and pepper
  • Crush stock cube and mix in
  • Squeeze the juice of 2 limes
  • Add Coconut milk and Water
  • Bring to a simmer and cook for 15 mins with lid on
  • Add noodles and simmer until noodles have fully cooked
  • Serve with garnish of coriander


Additionally you can add cooked fish or meat into the soup e.g prawns, cod, salmon, chicken
